How are you with eggs?
I don't know about you but after my first colonoscopy as a kid the only thing I could stomach eating was a scrambled egg sandwich on buttered toast!
Brocolli can make even the healthiest person gassy! And apples or any fruit with tons of fiber like pears are a no no for me.
It's interesting how you feel ok eating sushi. I lived in japan for years and ate tons of japanese food all the time, not just sushi, but ramen, shabu-shabu, gyudon, tonkatsu, etc, and I felt great! I swear, I could eat japanese food everyday! Most of it involves lean meats/dishes that are low in oil, dairy, and citrus, but their cuisine also includes some raw vegetables which sometimes caused me problems if I ate too many of them.
Have you thought about making your own sushi? All you need is a rice cooker, the right kind of rice (I use Botan rice found in walmart), rice vinegar, nori/seaweed, and whatever you want to add that's safe for you, such as fake crab, cucumber, and avocado like in a california roll or a piece of cooked shrimp. Sushi doesnt have to be perfectly shaped you can just put all your ingredients on the seaweed and eat like a seaweed sammich!

I think what you described is a philadelphia roll and it has a salmon and cream cheese. It's not my favorite roll, but I bet it's just as easy to make!
You can even go all out and buy a set that will help you make a tight roll.
