Delayed diarrhea?

I ate an unusual amount of veggies on Thursday but I haven't had any issues with my bowels the last few days except for some standard bloating and gas (which is pretty normal). Then suddenly today (Sunday) I had really sudden painful diarrhea and it looked liked there was upper GI blood. Sorry for the TMI but what came out looked like the food from Thursday. I would have expected to have a reaction sooner. Does anyone else have delayed reactions like this? I am trying to figure out what actually triggered this, it being food from Thursday seems odd especially since I have felt fine.
