Yeah, many people with Crohn's do best with a low-residue diet (google it for more info, if you're interested). Nutrients shouldn't be a major issue, provided you're eating meat, eggs, and a few other things as well. But if you're worried, experiment with different fruits and vegetables and different ways of cooking them. Veggies can be blended into soups or purees. Ditto fruits. Failing that, take a multivitamin table with your main meal every day.
You don't mention the SCD but that is something else you could look into. It's like gluten-free on steroids: it's gluten-free, grain-free, dairy-free and almost everything else-free. But if you're motivated, some people do get results from it. Once again, google it for more info.
