There's a common misconception about serotonin. The serotonin in the brain acts entirely differently than serotonin in the guts, or other parts of the body. Serotonin in the guts does not cross the blood brain barrier. It regulates bowel movements and other functions, however it has no effect there upon mood.
Not eating gives bowel rest. When the bowel is inflamed, bowel rest provides relief. That relief feels great! But of course we need to eat...so it isn't a long term solution.
