One of your good friends will be herbs. This will give you flavor that you will be missing from the foods listed above like garlic and onion.
Are nuts out?
Carrots, beets, celery, squashes, eggplant, asparagus, tomato, avocado, potato, sweet potato,
All fruits? If you are looking for a mild fruit, Asian pears are really good. (my hubby doesn't react to those.)
Dried fruits are out probably because of the mold issues.
Can you use Coconut sugar? (low glycemic index). Possibly Maple Syrup could be used in small amounts if you needed to sweeten and make a stir fry substitute.
In baking, I have had good results with using hemp milk in making biscuits (GF). My daughter prefers soy, but you probably want to avoid that since it is bean based. When I used coconut milk, I cut way back on most of the oil if not all of the oil called for in a cake. There is always Rice milk if you need to go really milk.
I use Palm Oil by Spectrum if I am looking for a shortening/butter replacement.
If you do not react to coconut, you can make or purchase coconut flour. If you think you can tolerate it, there are lots of Paleo recipes that use Almond flour.
There are some Rice crackers and some corn flour crackers. (Gultino is one company) If you would like a link to the rice based crackers, I can look them up on Amazon that I buy for my husband and you can look for them in the store.
I would not think that you would have to avoid any meats except for cured meats. Read the label on all of the raw meat to make sure birds are not injected with broth. Many times that broth will have the garlic/onion/gluten which could send you into a reaction.
You have brown rice, Jasmine, Basmati, short rice, long rice, medium rice, there is a black rice in the Asian stores when cooked turns purple that is supposed to be full of vitamins for good health (that is what my local Asian sales clerk encourages me to eat some of for better stomach;) I am not so sure of that claim, but it makes her happy and it tastes good for a change of pace.)
The Asian market sells spaghetti noodles that are 100% rice and they are cheaper than at the health food stores.
Adding Nutritional yeast to dishes gives off a cheesy/ nutty taste.
