I'm sure others will have plenty of other suggestions, but some off the top of my head are good fats - things like nuts/nut butters, healthy oils (coconut, olive), avocado, etc. They also have a decent amount of calories so they should help.
Also, if you are looking for recipes that fall under the typical Lyme diet, I have found Pinterest to be very helpful for finding healthy recipes. I have found awesome "clean" versions of many yummy foods, and the recipes often offer substitutions for ingredients you can't have.
