I've eaten beans for a long time, mainly black beans. I soak them overnight in water with with Kombu seaweed to soften the outer part of the beans. I also buy some that have been soaked the same way, for times when I want something quick. Someone said they're good for detoxing, but I don't know that I believe it.
I make a quick meal if I have leftover rice past and some beans. I mix them together and heat them along with some vegetable and salsa to flavor it. It's not too bad and it's satisfying.
