I know this comes up in the threads once in a while, but I'm looking for something new (perhaps there isn't anything). Recipes. WHAT CAN I EAT?! I don't follow any one strict protocol, but I avoid gluten, dairy, sugar, and most processed foods.
First, for travelling - day trips, picnics, etc. What do you like to pack for travel or a work lunch, or anywhere that's not home, that holds well in a cooler?
Second, what can I stock my freezer/pantry with for these weeks when I just can't bring myself to slave away in the kitchen? I swear I never get out of the kitchen
I tried looking up freezer dump meals but didn't come away with much for Lyme and Candida friendly recipes. Everything has tomatoes (which I try not to eat too much of, lest the nightshades attack) or cheese.
Almost everything has fruit or sugar, and I really need to cut all of it, because I'm struggling with Candida.
The twist: I can't have soy, including soybean (vegetable) oil.
What I have so far (and please let me know if there's anything here that should be avoided):
- homemade hummus and raw veggies for dipping. this is my travel lunch. and its getting old
- salad. so sick of salad
- smoothies. so sick of smoothies. I'm poor, so I have to use a garage-sale food processor, then a thrift-
store blender to get anything liquid. sick of washing those. and without fruit, they taste awful.
- frozen meatballs (I found a recipe called "emergency meatballs", for the freezer. I use local grass-fed beef)
-quiche for cheating (dairy) GF crust, and my gosh that's a wonderful zap-it-and-eat-it thing to have all ready to go for breakfast.
now I'm hungry.
