EBV is NOT a harmless virus.
I repeat---EBV is NOT harmless for many people. I'm not sure where you picked that up mpost but it's completely incorrect.
You can share that it was not an issue for you, and it is very true that most people carry the virus and many are asymptomatic. But you're in the Lyme & Co world, now. EBV can derail the best treatment protocols. I know first-hand.
Many people here on the forum experienced a significant boost to a good but struggling protocol simply by lowering EBV titers and maintaining low titers. It's not a stretch that other burdens and demands on immune function can allow pathogens to get a stronger foothold and become dominant. And it can happen pretty quickly.
I think the comments regarding autoimmune response are accurate as well. It's certainly a possibility. As are other possibilities ---the energy on this forum needs to be redirected from definitive statements over what is or isn't possible - and to help each other figure out what our individual and unique experiences MEAN.
You might also consider that a yeast/fungal overgrowth can occur fairly quickly as well (particularly w/ abx tx) - and once gut biome is disrupted, imbalance can occur in several ways, including a bacterial imbalance. Whenever people mention neuro-psych sx (brain fog, confusion, memory lapse, anxiety, depression, rage, etc...) it's important to consider what is going on in the GI - remember the gut-brain connection science confirmed when they found the blood vessels connecting the two. Neurotoxins in the gut can absolutely reach the brain.

Our bodies are in a constant state of change - the illnesses and treatment are all dynamic so every now and then it's good to re-evaluate.
Also, one infection can become dominant at any given time, especially if your immune system and/or GI is compromised (remember 70% of your immune system is your gut).
I know it's tough to do but the more detail you can provide about
sequence of events, diagnoses, protocol, correlations, etc. the more help we can try to provide.
Try taking the sx questionnaire (again, possibly) and get a good read on what the dominant issue is.

Have you explored anti-inflammatories? My Lyme-knowledgeable neuro suggests that most neuropathy is caused by inflammation.
