Gluten can obviously have lasting effects over time.
I would still take it easy and use this as a trial period to see how you feel in a month or so.- sometimes it can take that long
Gluten is somewhat inflammatory to me (cytokins, no antibodies though) , going GF made my 10 year thyroid nodule disappear per imaging.
I eat ok gf, I used to it now since im not into pre packaged foods. Target and wallmart have a new, better tasting gf bread thats 5$ a loaf.
Biggest issue for me with GF along with alcohol free, is both put complicate social outings.
I quit even light drinking to be as anti-inflammatory as possible and for liver health. I really only drank beer, they have one good gf beer (gluten removed actually), but its still an alcohol beverage and is spendy.
