It varies for everyone. Some feel great within the first few days, others say it takes months or even years to fully realize the benefits from going gluten-free (GF).
For me, a migraine I had at the time I decided to go GF disappeared within a day of starting the GF diet. Other things took several months. When I'm accidently "glutened" (exposed to gluten unintentionally), it can take 6-8 weeks or sometimes months to detox from the gluten exposure. In my case, gluten dysrupts gut motility and progesterone, so I get diarrhea, worse slow stomach emptying symptoms (fullness after eating, lack of apatite despite eating long before, etc.), monthly migraines & cramps. The first two symptoms go away within a few days, but the hormone dysruption (migraines & cramps) takes weeks or months to return to proper levels. I don't know if supplemental wild yam or other hormone support would decrease the length of time that I experience these symptoms or not, haven't tried yet but it is something I want to try eventually (have other issues I'm working on right now that are much more critical -- methylation cycle genomic variants and MCS).
