I brew a few batches a week, I have a 2 gallon jug, a gallon and a quart I do and it is not time consuming at all. I brew the tea and let it sit all day to cool. Then I transfer the kombucha tea from one container to the next and refrigerate it. I bought my scoby from
Kombuchaamerica.com, they guarantee them if you buy 2, that way if it gets contaminated they will send you one for free. So far mine haven't gotten contaminated and I've had them for a good 9 months.
