katebirch - why don't you try doing what I do -
I have not dismissed gluten altogether, but try to avoid it as much as possible. I still have bread, but maybe once or twice a week I will grab a piece with butter - I LOVE bread too, and so does my family. I have to serve it to them, so it's not like I can choose not to bring it in the house!
I cut out cold cuts, sandwiches, bagels, etc. now I eat more salads and rice with veggies for lunch.
I eat gluten free products when it's easy - like gluten free chicken nuggets, gluten free pretzels, and gluten free pancakes.
When I go out to eat with my hubbie - I follow no restrictions and enjoy myself.
So I would say I cut out gluten by at least 60%. Do I need to cut it 100% - I don't think so, because it doesn't make me feel any different when I do eat it. The only thing that messes me up are bagels. my stomach blows up if I eat a bagel - so I am sure tickbite is absolutely right about the chemicals!!
