My sleep is most affected by my thyroid. If my levels are within my "comfort zone" (high range FreeT4/T3), I sleep well.
If they are too low for me, I'll wake during the night (sometimes multiple times) and can sometimes have trouble falling back asleep. The lower my thyroid levels are, the worse the issue.
One of the reasons I think organ meat is helping me is that it has higher levels of iodine than regular meat. The iodine in organ meat has better uptake to receptor sites IMO and we need iodine in our mitochondria in all of our cells, not just our thyroid. I believe there is a balance that occurs between our muscles and our thyroid gland and when an imbalance occurs in the muscle tissue, the thyroid starts sending out iodine to help the muscles. This can decrease usable iodine for thyroid hormone production.
