Diets are one of the most hotly debated subjects among many Lyme patients. I didn't follow any type of "Lyme Diet" while I was healing the first time and healed well and quickly, so I'm a lot more "loose" with my interpretation of diet. I do believe that we need to avoid just as much processed food (especially 'fast food', microwave meals and such) as we can, simply because they contain more toxins and less nutrients that we need to heal.
I only drink my one cup of 'fake coffee' (Pero) and then water -some with lemon - the rest of the day, except for detox tea, my medicinal tea I drink as part of my treatments, and Celestial Seasonings Sleepy time tea at night. If I really feel the need for something different, I add extra lemon and stevia for lemonade, or use lime juice in my water.
For food, I eat high protein, very low carb - but don't follow any diet except my own, which is to avoid foods that just don't agree with me or I'm allergic/sensitive to. For me those foods are soy, MSG, white potatoes (make me bloat!), and then I have to avoid foods because they seem to be interfering with my thyroid - kale, spinach (

), and a few other things.
It's quite possible that you don't have enough stomach acid since the "fizzy" drinks help you. I used to use them as well. After using digestive enzymes for a few years, I switched to using apple cider vinegar just before I eat instead, as it also helps me to detox (a 2 for 1!)
Here are some simple at home 'tests' you can do to check your stomach acid:
