I've not done the second ferment - I like my kefir too well! LOL! If I ever get bored with the taste, I just add a few drops of good vanilla extract.
I bought my last kefir grains back in 2010 - I had used them and they grew beautifully, so I started dehydrating them, adding some powdered milk once they were good and dry and then freezing them, so I could share them with others. Well, I managed to run my "stock" too low, and when I had to make a trip half way across the US to move my Mom, the kefir grains didn't survive it because I was really, really sick by the time I got back and taking care of kefir grains just wasn't on my radar - surviving was.
Anyway, I was cleaning out my deep freezer last year, and low and behold - I found one last package of kefir grains that I had frozen back in 2011!! Now, I wasn't expecting them to be able to do their thing again, but I couldn't bring myself to throw them out (they're my babies!! LOL!), so I tried restarting them. What the heck, it would only cost me to buy a couple half gallons of milk to find out.
They worked!!!
I was, and still am, completely amazed! I did have to baby them along in the beginning, but it worked, it worked!! They aren't supposed to be kept frozen for more than a year, and mine were frozen for
5 years and still are producing that wonderful, healthy kefir!!
