Girlie - If it was me, as long as I'd see improvement, I wouldn't look into making things more complicated. In other word, I think you are doing things right. If you ever plateau, maybe you could look into changing a few eating a bit IN case it changes anything but else... yeah... whatever makes you feel right.
Well I did stall out with my treatment a couple years ago....but now that I've moved on to another Lyme Doc, things are going in the right direction again.
I definitely would change things up if I reacted to any of the food(s) I eat....
I do still try to eat healthy. For instance: Breakfast is often a couple of soft-boiled eggs. Sometimes it's dinner leftovers. Lunch is dependent on if I'm hungry - ie sometimes my breakfast is later in the morning. I may just have a piece of fruit (apple with cinnamon)
Dinner is small portion of meat and usually a large salad with olive oil and vinegar dressing (and some honey drizzled on it) Salad: Lettuce, broccoli, carrots, avocado, tomatoes, fresh basil, and some grated cheese on top.
Or Chicken curry sauce on a bed of rice with cooked broccoli, celery, carrots.
Snacks in the evening are popcorn (usually) with melted butter and flaked yeast.
But, i have been known to eat a cupcake here and there...or a chocolate bar....
...even a pizza
