Remember there are different ways that foods can affect us.
These two articles are mentioning protein mimicry, which I don’t know how they prove but seems to be a pretty popular theory for years now.
If you have known antibodies and changing the food results in improved / lower antibodies, well there you go that was the problem.
Then, that problem could also be increased if you have what they call increased gut permeability a.k.a. leaky gut, which is also mentioned in the above links. That’s kind of hard to prove too, but Genova does have a test for that which I took years ago and suggested I had it. I didn’t retake that test because it was expensive compared to the thyroid antibodies tests which are covered by insurance.
And then there’s food that can release cytokines in your blood, which is tested by leap MRT, mediator response test. So this is blood inflammation from your immune system. Gluten, corn products , sugar , turkey and cinnamon, were the worst ones for me, In that order. I avoid gluten 100% the others probably about 90%. That eliminated my 20 year old thyroid nodule, a.k.a. a small tumor. (As proven by repeated ultrasound imaging). Unfortunately it has not shrunk my adrenal tumor at all but it doesn’t seem to be growing anymore either.
Surprisingly my MRT test didn’t show Milk products to inflame my blood (cytokine / mediator release)even though I appear to be somewhat lactose intolerant because it does cause some digestive issues which is different than inflammation in blood. So I only consume milk products in very low quantity. I’ve been consuming almond milk with gluten-free cereal for years now, and I will admit I feel a little conscious about the fact that almonds use so much of California’s water, so I no longer just drink almond milk - I only have it with gluten-free cereal several times a week. On the plus side it seems to last longer than cows milk in the refrigerator.

Foods that you may not digest well is not mentioned in these articles (like lactose intolerant and FODMAP foods), but they can ferment creating SIBO and Candida/yeast overgrowth.....which can then lead to "leaky gut" and make trigger any immune offensive foods (IF you have any) into creating an immune response in your blood (way above).
