Regarding your weight loss, energy levels, have you tried using shakes?
I own a Vitamix blender (similar to blendtec, and a host of others), and was making my father fresh fruit/protein smoothies daily.
A very healthy/tasty/easily digestible source of calories.
Typical recipe of mine:
1 cup of orange juice (add more/less to get desired overall consistency)
1 cup frozen blueberries (if not frozen, then you may need to add some ice to get the smoothie cold)
1 banana
1 apple (cut it up, but leave the red skin on!)
Few tablespoons of sberry yogurt
Few spoons of wheat germ.
1 heaping scoop of protein powder (whey).
I also add spirulina powder to mine, but my father didn't want it... :)
This is my breakfast almost every morning.
