You've gotten more good advice here, I'm afraid, than you have from your doctor. I'm not sure what to suggest beyond what the others have said -- slow WAY down, tell us more about your biopsy report (not only the Gleason score, but also extent of the cancer, etc.) and where you are located.
I'm surprised that a doctor is suggesting only surgery or HIFU, unless those are the only treatments he personally can offer. With a G 3+4=7 diagnosis it would seem that you have many options. So many options, in fact, that it may seem overwhelming to decide on one for yourself. I know -- I'm relatively new to this myself (diagnoses last July) and also was graded G 3+4=7. I spent over 3 months learning and deciding upon a course of treatment, then took almost another month to even start the treatment. I was diagnosed in early July and finished radiation treatment in late November. Most PCa is so slow growing that we have that much time (or even more) to decide, and as the others have said, you may even qualify for one of the Active Surveillance protocols.
Take the time to learn, discern and decide on the best treatment for yourself. You only get to choose primary therapy once, and you owe it to yourself to get it right.
