totally random hard-boiled egg question

OK, so I know this is random, but I have found the members of this site to be so helpful and knowledgeable about UC stuff, i thought someone may know the answer to this. Sometimes when I had-boil eggs the shell is really hard to take off and i end up peeling off a lot of the egg white with it, and other times i can easily pull the shell right off without losing any white...anyone have any tips?

as soon as your done boiling them put them in ice water to cool rapidly.

The fresher the egg, the harder it is too peel. If you've had eggs in the fridge for a week or more they are easier to peel

Try adding a little salt to the boiling water with the eggs in them...and yes, cooling them under cold water immediately should help as well.

Granny here who has boiled a few eggs in her time - all the above are right. But especially FRESH eggs peel harder.  My grandpa was a chicken farmer many years ago. Or try this....

Elaine....that's the absolute best!!!! haha...

I do agree that fresher eggs are most impossible to peel..it's like they peel in layers..ugh. Also some have kind of a powdery texture, not smooooth as the whites should be.

I have an egg daily, but I do the cut the top off, scoop it out and then spoon out the rest. I got the absolute egg cups that the egg doesn't get stuck in..lol!

Oh, has anyone noticed that the large eggs are the "old" medium size?

didn't realise there were so many ways to peel an egg after checking out others on YouTube..thanks again Elaine, must try it out..

Before boiling eggs, I take a needle and put a tiny hole in the large end of the egg. After cooking, I cool them quickly in ice water. The hole not only seems to make them peel easier, but it helps prevent the shell from breaking while being boiled.

Omgoodness!!! I have been wondering about this for YEARS! I am so glad that you all gave some tips because boiling eggs and trying to peel them drove me crazy. :)

The cold water prevents the edge of the yolk from turning that awful green/grey colour, I don't think it prevents the shell from sticking.

barbl is correct about egg age, the older the egg, the easier it is to peel. DH eats 2 every day after his workout and likes his eggs in the fridge for at least one week before boiling.

Glad you enjoyed the my tube - I saw that on tv also.  I forgot to mention that I don't really like hard boiled eggs except as egg salad with lots of mayo - my colon does not agree!  I prefer an omelet!
