Not to sound negative because I appreciate the research enthusiasm, but I think by now I must've read over 50 different blogs detailing people's personal experiences with UC, not to mention forum surfing. Everyone has a different story of how they got better.
What I learned partly through my flare is that other people's experiences can only provide a guideline for what MIGHT be safe and what MIGHT work. If 90% of the chorus are saying that a certain food or supplement wreaked havoc for them, then it will likely do the same to me; but if there's a 50/50 conversation happening, then I may take the risk. And some things seem universally good.
Beyond that, it's totally subjective.
