You do NOT need the steroid based on the symptoms you have.
You do NOT have a diagnosis yet.
And yes....mesalamine oral and rectal enemas have been my only med regimen for 28 years, so yes it has the amazing ability to get one into remission and be maintained with a dosage decrease by tapering.
Your body pain needs to be checked out and further blood tests and xrays need to be done if you have obvious inflammation.. You could be referred to a rheumatologist through your GI.
It is possible you had a viral or bacterial infection....both of which can cause joint pain. IBD can have secondary joint pain....some related directly, some not.
Some are sensitive to mesalamine meds.....and yes, body and joint pain can be a side effect.
If you are wanting to try the pred.....try it. What was the schedule regimen for tapering?

I don't want to try the pred to tell you the truth, I Just want to make sure that I can in fact receive remission through the current meds I am on. My joint pain moves around so would be hard to tell where to get an xray from but I have had stomach and chest xrays along with full blood work done 3 weeks ago. Showed nothing out of ordinary except my pancreas was creating elevated digestive enzymes.
The body aches/pain have been going on for months.
