I'd wonder if the stress/anxiety/worries come back when you see her. Could be more of an IBS reaction, than anything else (anxiety can be a trigger for those with an IBS). We can get a PTSD sorta thing with UC, and prolonged stress can cause flare like symptoms. Your worries about your health impacting this relationship, your mind is running wild and impacting your bowels, creating a self-feeding loop that creates what you fear most.
Considered anti-anxiety meds to see if they help (if your mind and anxiety is truly running wild)? Try not to worry about being healthy for her, about the many other if's and why's being healthy is important. If you bear the weight of the earth on your shoulders, and UC, you will go bonkers (too much for even the strongest person to manage). Rather focus your vision on your feet, on the here and now, not the future. As there's just too many unknowns in the future you cannot possibly control, more so with living with a chronic illness. Focus on what you can control only, and that's a very limited set of things. Try not worry about the uncontrollable and unpredictable (practice mindfullness, meditation, and anything that relaxes you).
