Cooking with Olvie Oil

Ive been in remission from my UC symptoms for probably 3 months now but im experiencing other issues related to autoimmune diseases. Ofcourse inflammation is not good when we have these diseases. Ive been doing all my cooking with cococut oil and found that coconut oil is causing some of my inflammation. Ive been doing some research online and found that cooking with olive oil may be beneficial in my case. Does anyone on here cook with olive oil or has any experience with it? Does it have any ill affect on UC or is it safe? I know everyones different but just curious. Ive been cooking with coconut oil for over a year and half. Could be some of the reason i could never get better.

Im having inflammation of my joints and lupus type symptoms but drs say theres nothing wrong. All my blood tests are in range. I know for fact food has something to do with it. Reason i know cause i started to get brave and strayed away from my diet for UC cause i was doing so much better. Everytime i eat sweets or go over board on eating any type of meat my symptoms increase dramatically. So i took a dna test to figure out which foods are beneficial and are harmful to me. Coconut oil was one of the foods causing me problems. Also started ( 3 days ago) eating according to my blood type. So far so good. Also have a form of degenerative cartilage disease. One of the blood tests from the dr shows it may be an issue but they wont pursue it any further cause the other blood tests are in range. They want to wait to see it it gets worse. Not gonna wait around to be deformed or crippled.
