The surprising (to me) conclusion:
Consumption of ultra-processed foods was shown to correlate with increased risk of Crohn's Disease, but showed NO association with increased risk of Ulcerative Colitis.
Even though the authors note that components of ultra-processed foods (sweeteners, emulsifiers, etc.) have correlated to UC in lab models. But no statistical effect in the human population studied.
