I don't know about inflammation, but there are trigger foods that can cause migraines and also esophageal spasms. The foods that I have trouble with all contain sulfites.
I don't know if the vagus nerve has anything to do with migraines, but it certainly connects the esophagus with heart, intestines, lungs, etc. When I get esophageal and stomach spasms, or just intestinal problems, I usually get tachycardia.
The way to find out if you have food triggers is to keep a food journal - see the archives (search box at the top of the page) for many posts. Allergists, gastroenterologists and cardiologists that I have seen mostly don't know anything about food triggers and don't believe in them. I know just what to eat if I want to prove the connections though, and there are journal articles. Google cardioesophageal reflex. With an E, not reflUx!
